Avocado Pudding


This is the best dessert for... well any day (everyday??). Especially for the days when you want something sweet on the fly, have extra avocados getting dangerously ripe, or simply want a healthy dessert replacement because you can't be trusted with a pint of ice cream...


This recipe is light and delicious, like cool whip combined with pudding cup texture. If you choose to add less water (6-8 tablespoons) it is more like a rich chocolate mousse.



Avocados are amazing for our skin, satiety, and they are generously filled with antioxidants. Fun fact, this fruit actually contains glutathione: an important powerhouse antioxidant that is produced by our own bodies when we are healthy and in balance.


This is a satisfying beauty-food that can keep us looking and feeling young for longer. Ice cream is cool, but I don't see anyone calling it a fountain of youth :)




Chocolate Pudding

(Serves 1-2)


Ingredients:

-one ripe avocado

-2-3 T raw cacoa powder (less milk chocolate, more dark chocolate flavor)

-2 T of your favorite nut butter

-4 T lakanto powder (sugar-free) or honey to taste

-small pinch of sea salt or pink salt

-8-10 T of pure water

Directions:

1. Put all ingredients in blender and pulse in 5 second intervals if using a Nutribullet type blender. You can also put in a bowl and use an electric hand mixer to whip it up- this way will be quicker.

2. If using a Nutribullet you may need to stop blending, stir it with a spoon, and continue. It would be easier to blend with more water, however to keep it thick and rich we don't want to add too much.

3. Once smooth and whipped up, transfer to bowl and finish off with your favorite toppings.

Tips:

*It probably tastes the best chilled, however it is hard to tell because it is pretty much impossible to not eat it extremely fast and immediately. :)


*Make sure the avocado you are utilizing actually tastes good! The flavor of the pudding can really change if it isn't the best tasting fruit.
